Happy Thanksgiving, Pangeans!
We’re getting excited to celebrate Thanksgiving with our family and friends (and let’s be honest, to eat a lot of delicious food). There are recipes everywhere for stuffing, turkey, cranberry sauce, casseroles—the usual. But at the Pangea office, when we talked about Thanksgiving, we found ourselves talking about tacos.
Not just any tacos, though: Thanksgiving-inspired tacos.
Here are a few office favorites we found on our quest for the perfect Thanksgiving taco. If you’re away from your loved ones during the holidays, we figured making these delicious tacos might be a great distraction.
Pumpkin Spice Tacos from Camille’s Kitchen
It’s like a pumpkin spice latte, except with actual pumpkin (and tortillas!). These pumpkin tacos get extra flavor with a spicy chipotle sauce, avocado, and pumpkin seeds.
Turkey Tacos with Cranberry Salsa from Simply Recipes
This is the most creative use of leftover turkey we can think of—and the homemade cranberry salsa with a kick from fresh jalapenos makes it even better.
Sweet Potato and Black Bean Tacos from Cookie + Kate
Sweet potato dishes are another staple at Thanksgiving dinners, but these tacos with spicy black beans and avocado-pepita dip makes our sweet potato casserole seem pretty boring in comparison.
